2 cups brown rice flour
4 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
4 Tbsp. coconut oil ( or butter or vegan butter)
1/2 cup Almond milk
1 tsp. apple cider vinegar
1/2 cup + 4 Tbsp. pumpkin puree
2 tbsp truvia or WAY more if you need sweet
( coconut sugar too)
Dry one bowl. Wet another. Combine into a dough. Add more flour if too sticky.
Roll out flat & cover with
***Coconut sugar & pumpkin pie spice & nuts
Roll into log & cut into slices- about 12. Place in sprayed baking dish.
Bake 375 15 min.
Icing:
1 cup powdered sugar ( yes powdered)!!!!
1 tbsp room temp coconut oil ( or butter or vegan butter)
1 tbsp vanilla
Combine well
Then add splashes of almond milk- splash & stir.
Repeat more if needed to reach desired consistency
Whisk well!
